Oven ‘Fried’ Chicken Thighs

Ingredients:

  • 1/2 cup Great Value nonfat plain yogurt
  • 2 tablespoons lemon juice
  • 1/4 teaspoon pepper
  • 4 bone-in chicken thighs (about 1-1/2 pounds) skin removed
  • 2 cups Great Value Hearty Grains MultiGrain Snack Chips, Sea Salt flavor (about 2 ounces)

Directions:

Combine yogurt, lemon juice, and pepper. Pour over chicken thighs in a nonmetal dish or re-sealable plastic food storage bag, turning to coat well with yogurt mixture. Refrigerate 30-60 minutes.

Preheat oven to 425° F.

Place crushed chips in a shallow dish.

Remove chicken thighs from marinade; discard marinade.

Dip chicken in crushed chips, coating all sides, and place on a rimmed baking sheet, sprayed with nonstick cooking spray. (If using Bran Flakes, spray-coated chicken with nonstick cooking spray too).

Bake in the center of the preheated oven until chicken is cooked through and registers 165° F, about 25-28 minutes.
