Apple Cider Spice Bread

Is anyone else wondering where September went? I always feel like fall flits by more quickly than I would like it to, but for some reason, this year seems extra busy. I’ve been making a conscious effort lately to slow down, take a deep breath of cool, crisp air, and try to refocus. I find it especially important to do in the morning when I’m already starting to feel overwhelmed by the list of to-dos that stretches out before me. Lately, it’s been as simple as a hot cup of coffee and a little nibble, a few quiet moments to me before taking on the day…and that’s where this apple cider spice bread comes into play. It’s simple, seasonal, and one of those snacks you probably already have all the ingredients for in your pantry already since it’s the season for apple cider. Make this bread – heck, you can even glaze it if you want – and have a little “you” time. Have a wonderful week!

Ingredients:

  • 1/2 cup butter, melted
  • 2 eggs
  • 1/2 cup packed brown sugar
  • 1 1/2 Tbsp molasses
  • 1/2 cup apple cider
  • 1/2 cup unsweetened applesauce or apple butter
  • 2 1/4 cups white whole wheat flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 1/4 tsp ground ginger
  • 1/4 tsp cardamom
  • 1/4 tsp nutmeg

Directions:

Preheat the oven to 350 degrees and grease a loaf pan. I a large bowl, whisk together the butter, eggs, brown sugar, molasses, apple cider, and applesauce.

Whisk in the flour, baking soda, baking powder, salt, and spices.

Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Spoon the batter into the prepared pan.

Bake about an hour or until a toothpick inserted in the center comes out clean.
