Ingredients :
- 1 frozen turkey breast (with skin) (6-8 pounds) thawed
- 1 medium orange
- 1 tablespoon plus 1/4 teaspoon finely chopped garlic divided
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1/4 cup Great Value light mayonnaise
- 1/8 teaspoon paprika
Directions :
Position a rack in the lower third of the oven and preheat oven to 325° F. Remove thawed turkey from packaging and pat dry. Place turkey on rack in a shallow roasting pan.
Remove zest from orange with a fine grater and cut half of the orange into 4 wedges; reserve.
Combine 1/4 teaspoon orange zest, 1 tablespoon garlic, salt and pepper.
Separate skin from turkey meat, sliding hand gently between to loosen. Rub orange-garlic mixture under skin.*
Squeeze orange wedges, drizzling juice over turkey and then place the juiced oranges in the cavity. Roast in the lower third of the oven according to package instructions until a thermometer inserted into the meat registers 165° F, about 2.5-3 hours. Remove to a cutting board and let rest 15-20 minutes before carving.
Meanwhile, combine 1/4 teaspoon each remaining orange zest and garlic, mayonnaise and paprika. Serve with turkey.
Notes:
*Note: The orange-garlic mixture can also be rubbed on the outside of the skin, but the flavor is better when it is rubbed underneath and the skin is discarded.
